Italian Meatball Pizza
Ingredients
Meatballs
50g coarse minced (ground) pork
50g coarse minced (ground) veal
2 tsp garlic confit
3 tblsp onion confit
½ tsp chilli confit
10g fresh white breadcrumbs
1 tblsp chopped flat-leaf (Italian) parsley
1 egg yolk
1 tblsp olive oil
Pizza
coarse semolina, for dusting
1 quantity pizza dough
½ quantity basic pizza sauce
75g Perfect Italiano Mozzarella
6 basil leaves
2 medium roma (plum) tomatoes, coarsely chopped
1 tblsp chopped fresh oregano
3 cloves of confit garlic
80ml confit garlic oil
35g Perfect Italiano Shaved Parmesan
Method
TO MAKE MEATBALLS:
Combine all the ingredients except the oil in a bowl and season to taste, then roll the mixture into large marble-sized balls. Heat the oil in a large heavy-based frying pan over medium heat and cook the meatballs for 5-6 minutes, or until golden.
Place a pizza stone or heavy-based oven tray in the oven and preheat to 250°C. Lightly dust your workbench with semolina, then roll out the dough into a 30cm round, place on a pizza tray and prick all over with a fork. Spread the base with the pizza sauce, then scatter with Perfect Italiano Mozzarella, basil and meatballs. Place on the preheated stone or tray and bake for 5-8 minutes, or until the base is golden and crisp.
Meanwhile, put the tomatoes, oregano, garlic confit cloves and oil in a bowl and season to taste. Remove the pizza from the oven, top with the tomato salad, then scatter with Perfect Italiano Shaved Parmesan and serve.
