I&J Crispy Battered Hoki with Mexican Charred Corn

METHOD
Char frozen Edgell Corn Kernels with seasoning in oil on a BBQ plate or frypan.
Combine with tomatoes, onion, cucumber and rocket.
Cook frozen I&J Battered Hoki following packet directions. Serve with corn salsa.

10g Mexican Seasoning or chilli powder, to taste
300g halved cherry tomatoes
300g diced red onion
200g diced cucumber
120g rocket leaves
10 x 140g frozen I&J Battered Hoki Fillets
